Ever get a craving for some creamy dreamy goodness, but only have a budget for WIC? This recipe is great for those hard times, but delicious enough for the good times too.

In a large saucepan, stir together evaporated milk, flour, garlic and spices, and cook, stirring, for about five minutes until slightly thickened. Stir in Parmesan cheese until melted. Add cooked pasta noodles. Garnish with parsley - and dinner's ready!
  • 12 oz spaghetti pasta
  • 1 can Evaporated Milk
  • 2 tbsp All Purpose Flour
  • ¼ each salt and black pepper
  • 2 tsp butter
  • 1 clove garlic, minced
  • ¾ cup sliced mixed mushrooms
  • ¾ cup cooked, cubed chicken
  • ½ cup freshly grated Parmesan cheese
  • Fresh parsley (optional)
  1. Cook pasta according to package directions; drain and set aside.
  2. Stir together evaporated milk, flour, salt and pepper in bowl.
  3. Melt butter in large saucepan over medium heat; let brown, then add garlic and cook until fragrant.
  4. In a separate covered pan, sweat mushrooms over med-low heat.
  5. Gradually stir in evaporated milk mixture. Increase heat to medium-high; cook, stirring, for 5 minutes or until just boiling and slightly thickened.
  6. Remove from heat; stir in Parmesan until melted. Then add in mushrooms and chicken.
  7. Gently stir pasta into sauce; garnish with parsley, if desired. Serve immediately.
